Tasting:

Nestled in the hills of Impruneta, just a stone's throw from Florence, Diadema embodies a set of unique and purely Tuscan values. It is a true "diadem" (diamond) full of light and facets, reflected in every product from the estate, such as the oil produced at Villa Olmo, home to the winery and the family's relais.

The estate's oil mill has been processing local olives for many years. From these, a blend of excellent finesse is born, derived from the Moraiolo, Frantoio, and Leccino cultivars, proud representatives of the Tuscan identity intrinsically linked to this precious food for centuries.

The splendid bottle features a terracotta label, highlighting the strong bond with the famous local craft for which the municipality of Impruneta is renowned. It holds an extra virgin olive oil of good aromatic intensity; scents of freshly cut artichoke, tomato leaf, and a pleasant note of dried fruit enhance the characteristic fruitiness of well-crafted oils.

On the palate, there is a fine balance between bitter and spicy (pungent) notes, leading to a long and very persistent finish. This defines it as a "transversal" (versatile) oil, making it exceptionally easy to pair.

It is ideal for enhancing the organoleptic qualities of soups. As a highly digestible "fruit juice," it serves as a great harmonizer in any dish where all ingredients are of the highest quality. At Diadema, the story continues with that extra touch that makes this place a concentration of charm.


The Company:


It all begins in Impruneta, the beating heart of Chianti, where the Giannotti family has carried on a generational love for the land and its fruits.
Here, the Tuscan hills safeguard historic vineyards and olive groves. It is also where the ancient 19th-century aqueduct, the "Galleria Filtrante," has been transformed into an evocative aging cellar, giving the wines a unique environment in which to mature.

The adventure took shape with Alberto Giannotti, a visionary founder who knew how to combine respect for tradition with a desire for innovation. Today, with his daughters Giulia and Livia, and Francesco, the commercial director, the story continues with a new outlook yet remains rooted in the original values: authenticity, creativity, and excellence.
